All cruise ships must comply with the USPH operations manual and sanitation protocols. They must also have USPH Signs on board as part of compliance. Here are some of the rules cruise ships must follow:
Handle food and beverage hygienically. They must always wear a clean hat and clean uniform when in food handling areas.
Always use the 3-bucket system for cleaning. They should wash with soap and water in the red bucket. Rinse with warm clear water in the gray bucket and then sanitize with chlorine in cool water in the white bucket.
Always check and maintain correct food temperature. Always use a hygienically clean food thermometer and always use alcohol wipes to clean thermometers.
